Anchovies Fillets (organs & head removed) *personally recommend pekpak with bigger size
Wash the anchovy fillets, soak it for a little while, if you wish to have your dish flavor of less saltiness. Rinse the anchovy fillets and shake lightly to dry slightly.
Pour cooking oil into the a frying pan and heat up the oil.
Once the heated oil starting to appear small air bubbles, throw in(carefully) the anchovy fillets into the frying pan and fried it until it be come crispy anchovy fillets.
Remove the crispy anchovy fillets from frying pan, there will be a small amount of cooking oil left in the frying pan, now put some Sos Plum Asam and Sun Quick Orange (concentrated orange juice) into the frying pan to stir. (add in chili sauce in this step if you like spicy).
Once the sauces mixing up fairly, throw in the crispy anchovy fillets, and fry.
